I wanted to add an intro email at the beginning of this series. Once I unscheduled the emails that were already in the series I'm now stuck and not able to set up a new email as the 1st one in the series.

Excellent question, currently, the best way to get a new email as the first in the series is to unschedule all other emails after the first, schedule the new initial email as #2 in the series, unschedule the first email, and then finally reschedule the rest of the emails in your preferred order.
