I have a legacy landing page where people subscribe to email updates. When people sign up they receive an auto-generated email which contains the wrong sender and wrong subject (company has changed names). I can't figure out where this "welcome" email is so I can update it.

You can quickly find the welcome email of your account under the Automation campaign type. Once you've located it you can edit its step to make sure the from address and company name in the header are up-to-date.
