I have various log-ins within my main account, however, when creating a campaign, the email and name of the main account appears and is unchangeable. Is there a way to change that "preview" information to reflect the email and company name that I'm currently working with?

Are you referring to the information in the header of the email? You should be able to edit this by clicking on that section of the email, or even just the "Email Settings" link to the right hand side of it. Is the pop-up window for editing the email's header details (from name, from address, subject line, etc.) not showing at all when you click in that area?
If this is referring to an email's greeting tags / insert contact details, that will always default to the main account holder's contact info (what they have listed for themselves in their actual Contacts dashboard) for the in-account previews and test sends. For your archive and the webpage versions available after sending, these should default to the secondary inserts if you have them setup, or simply be exempted from displaying.
