Dates when email subscribes is way off! Months off! what is happening here?

I cannot understand why I have had subscribers today from pop up opt in on our website, and the date says April 15 or July 27, and not today's date November 7 2021?

 

I think its also throwing off some of my new subscribers reply welcome email with the lead magnet link1

 

Not good
