I realized today that an email was sent out through constant contact that I did not consent to be sent. The email is an email that get send out during coaching calls and was sent out on a random date/time I didn't select. There is not sent campaign connected to it. Please advise on how to make sure this doesn't happen again.

Have you checked with anyone else in your organization that would have access to the system, to see if they would've sent out one of those emails from Dec 14? Our system cannot send regular newsletter emails without them being explicitly scheduled or sent-now from the scheduling page.
