How are the online store notification emails triggered? Are they automatically sent to the customer based on the status of the order? Is this a manual process whereby I need to do something in order for a specific email to be sent to the customer i.e. order confirmation, shipping email, etc.

You can edit your online store emails from within the Website Builder system. The following email types are what's sent to customers:
