When someone unsubscribes, do they get an email confirming their request? if so, can we edit that and ask why they are unsubscribing?

Since there are a number of legal and Compliance elements associated with contacts unsubscribing, we don't send email confirmations to those contacts regarding their unsubscription. That said, you can add a "comment box" to your unsubscribe page, so contacts have the opportunity to provide the reason they're unsubscribing, either manually typed out or by making a generic selection (e.g. too many emails, never signed up, no longer relevant, etc.) This is done through the Footer Settings of your My Account page.
