WHy are all names highlighting when I choose one and where did my delete button go?

Arg. I hate it useful functions disappear. How am I supposed to remove these email addresses now?

Can you please provide a screencap or elaborate a bit more on what you're referring to? Is the issue that you're trying to delete contacts and somehow multiple are being selected when you click the checkmark box for a single one?
