You're free to manually move the contacts to other lists if you'd like.
You could include in the last email of the path, a big button or multiple, asking the customers to click on them if they're interested in receiving emails related to a different topic. You'd set up individual click segmentations for these buttons, tied to the respective lists, and all linking to a generic thank you page that you can make via custom landing pages.
The option to automate this is needed.
