' appears instead of an apostrophe after an email is sent

When I send an email using the RSVP drag and drop tool the apostrophe in the default "I'll be there!" is replaced with "'" on the receivers computer. This is the case for mobile and desktop. Without changing the wording to not include an apostrophe how can I stop this from happening? The preview looks fine.

Matters like these are on the end of the Email Client, but we still do our best to work with them in order to help resolve issues like this. While our developers make sure our RSVP Block displays correctly, at this time our current work around is to not use an apostrophe inside of the RSVP Block. We do apologize for any inconvenience this may cause

I've had the same issue.  Not happy with the response from CC.  Hope you guys fix this soon.
