If a prospect has their Outlook set up to show emails in a preview pane, does Constant Contact count that email as an 'open' even if the person never specifically clicked on it to open it?

Opens are tracked based on an invisible 1x1 pixel image included automatically in all emails sent through us. Unless the preview is allowed to show images, the "open" won't be tracked. If the preview does allow images to show, then the open will likely be tracked. I'd recommend going through this article on how opens are tracked for more info.
