If I have it scheduled to go at 7:30 am tomorrow morning and client calls at 7:25 am and tells me to hold it - can I unschedule it anytime before it actually goes out?

Correct, as long as when you are looking at the email campaign from the campaigns screen and it still is listed as “scheduled” status on the line directly underneath the campaign's name it can still be removed back into draft status. To quickly unscheduled, click on the “MORE” drop down button off to the right of that campaign and select the “unschedule” option to put it back into draft status.
