This actually can be controlled using your signup form. If you display lists on your signup form the customer will have the option to opt out of all lists or just one when they click to unsubscribe.
The system could also do this on the sign up form, creating less work for the user. When a person is added to a contact group they would also be added to a sign up form under their name. Not a lot of code and it would be most helpful to us the users.
