Hi there. At this time, only the all-opens report can be sorted by date and time. This should be addressed in an upcoming update, but there isn't currently a date set for that.
Thanks for your great question regarding the difference between Unique Opens and All Opens.
All Opens is how many total opens your email has, including the contacts who opened it multiple times (viewed in a pane, opened fully).
Unique Opens is each individual people who opened your email (they could have opened multiple times but will only display once).
