You're correct, after choosing the link option, you would need to re-apply your text formatting (color, fonts, styling, etc.).  You can change the default formatting for your links by going to the 'Design' tab along the left side, though that would change the default for all links, not just for the ones you're attempting to keep from linking.  The method I provided here is absolutely a work-around, and we're still continuing to track and work on a more integrated method of dealing with the automatic linking that occurs in many email clients.
