Interest Based Groups

Hi,

We are looking to create interest-based groups for our customers.  So that interest(s) which users has signed up for then will receive only those emails.
I checked for some time and found that "List", "Tag", and more promisingly "Segments" can help us in this regard.
Can you please advise

1) What feature of ConstantContact we can use to create interest-based groups/communications.?

2) Distinctions between "List", "Tag", and "Segments"?
