There's nothing to really code for that in a single email. The closest I can think of is having two separate emails and lists - one for mentors and one for mentees. The contacts would need to have their respective mentor/mentee setup as a custom field. Then you could set the email for the mentors with a greeting tag followed by an insert contact details. Then send the corresponding email to its respective list.
For example:
Joe (Mentor) - List: Mentors - Mentee custom field: Jane
Jane (Mentee) - List: Mentees - Mentor custom field: Joe
Email for Mentors - Greeting tag: First Name (Joe) - Send to List: Mentors - Insert Contact Detail: Mentee custom field (Jane)
Email for Mentees - Greeting tag: First Name (Jane) - Send to List: Mentees - Insert Contact Detail: Mentor custom field (Joe)
