I created an email and inserted custom contact detail fields. When I send myself a test message the fields are not populating. I do have entires in the custom fields in my test email account. I also included fallback text and that is appearing but since the fields are populated it shouldn't revert to the fallback.

Custom field data isn't pulled in test sends and previews. In order to "test" a custom field insert for an email, you'd need to send the email as normal, typically to a dedicated testing list of addresses. Then, once you've confirmed the fields function as expected, you can copy the email and send it for real to the desired contact lists.
