Resend an email with corrected or updated content
Will this work, even if you already scheduled the resend? Or will the resend be sent twice?

No, because the updated content "resend" is just a brand new send out. If you have an automatic resend scheduled for the email, you need to cancel it prior to your corrected-content version sending.
