This is an interesting scenario. I don't think I have a perfect answer to resolve it, but hopefully this is still helpful.
The follow-up email (the one with the $50 gift card) would have to be sent manually once you confirm the referral is successful, because we don't have a means to track that (do you have a current process for tracking successful referrals?).
If you have the automation path builder feature in your plan, you could set up a new automation to trigger when someone is added to a list. In this case, the referring customer's contact would be added to the list (manually) and trigger the automated email with the gift card. We don't have a system to facilitate gift cards, so I'm not sure what you had in mind, if there is a link or image that would need to be generated. The other concern would be that (I'm assuming) a new image/link would have to be generated for each unique gift card.
If you don't have APB in your plan or do not want to upgrade, another workaround would be to create an email with the gift card information and send it to yourself. Once you confirm the referral, you can go to the referring customer contact under Contacts and send the same email using quicksend.
