Is there a way to have the address at the bottom of the email reflect the address in the profile? Not to rewrite history, but for new emails even if they've been copied from old emails

You'd need to change the address in the footer of the email you're working on (can also be done via scheduling page), save it, and then copy from there to maintain it. If you're copying from a master template, you'll want to make sure that address is updated so new copies from it reflect that up-to-date address. The same goes for automation email steps.
