I think that for our operation it will be useful if in the Lists page you could add a column to state the last date in which a contact was updated, that will help us streamline feedback to our customers.
Another idea is to add an e-mail switch so that every time a contact is added to an specific list we receive an e-mail so that we could follow up rapidly.

Regarding the second part, while we do have subscriber update emails, there isn't currently a way to notify you when a contact updates their info, or for each individual sign-up. For voicing of use cases and voting, please see this Ideas thread.
