What is the behaviour of the sync when the contact already exists in constant contact.  Does it remove any of the information already present or will it change anything (ie customer fields, name/etc) that is being pushed over from Magneto

The Magento integration will sync info to the most up-to-date it has for a particular contact (email address). Therefore, any of the basic contact field info like:
- First name
- Last name
- Street address
- City
- State
- Zip/Postal code
- Country
will get updated when it syncs to your Constant Contact account.
