I am trying to create a table with two columns and four rows. When I select the table icon, it gives me three columns. How can that be edited.

When you click into the table, you can edit its dimensions, borders, paddings, etc. via the righthand side. There's additional options in the pop-up toolbar , including an icon for manipulating its row/column amounts. I'd recommend taking a look at this article for a full overview of setting up tables in the email builder.
