Help overview: The Cross Device email editor
Is there any way to force the image size within the editor or create a class to force the image to remain the same size between devices?Â

You can use the photo editor to set the dimensions for an image, beyond that, it's just a matter of stretching / cropping as needed while working in the email builder.
