I'm wondering if there is any setting available to receive notifications or emails when someone fills out the info on a landing page? I can see when looking at the details of each individual landing page whether or not there have been any submissions, but I'd like to be notified immediately when someone fills out the form.

You can set up the frequency of subscription update emails in the Reporting tab of your account, but otherwise there isn't anything for immediate notifications for each individual sign-up.
