can you see if a recipient has opened the same email more than once? The only way I can possibly tell is to compare openings vs. unique opening?

You can check for multiple openings based on email, by looking at its unique opens versus all opens. The other option if you're curious about a particular contact's activity is to look at their engagement notes.
