For the greeting portion of your email, you can either insert a Greeting Tag at the start of your email (Hello X, Dear X, etc.), or you can insert a Contact Detail and select the contact's first name, last name, or insert two Contact Details next to each other for both.

You can also personalize your subject line. I'd recommend this article for additional info about personalization options in emails.
