I'm new tho this. How do I get the name of the recipient to be included in the email greeting?

You can eitherĀ insert a Greeting TagĀ at the start of your email (Hello X, Dear X, etc.), or you canĀ insert a Contact DetailĀ and select the contact's first name, last name, or insert two Contact Details next to each other for both.
