We have had some instances where someone on our contact list FORWARDS an email and the recipient (not on our email list) hits the unsubscribe link...which unsubscribes the original recipient. Is there a way we can stop this???

If the person unsubscribing them confirms that address as the one to unsubscribe on the confirmation page, then we have to honor it. We'd recommend advising your contacts not to forward your emails to anyone they think wouldn't want to receive them. Or they can suggest to the people they're forwarding to to sign up for your emails directly.
