Yes, the 'Did Not Open' report will include anyone who did not open the email, regardless of the reason. So bounces will absolutely show up on there. Most 'unsubscribed' contacts will actually not show up there, because they generally open the email to get access to the 'unsubscribe' link at the bottom of your campaign.
