How do I change the color of the poll question text? It seems the default is black, but it's hard to read with the color I am using for my poll background.

The poll block pulls it coloration from the choices in your Design tab on the lefthand side of the email editor.
The regular text portion for asking the question is controlled by the Body Text in the Design tab:
The color of the buttons - text and button - is controlled via the Buttons in the Design tab:
The background will default to whatever your inner background is, but can be individually filled in with another color like other standalone blocks, using the block setting and fill bucket functions:
