I want to change the size and wording of the button to SUBSCRIBE,
I created the button from scratch but then I can't delete the existing button.

The sign-up button included by defult is going to be necessary, as that's how sign-ups are submitted. You can edit this button by clicking in it, which will cause the lefthand menu to swap over to the button's formatting options. Clicking in it will also allow you to rewrite the text within to something different, such as "Subscribe," "Sign me up!," "Submit," etc.
