How do I set a specific list as the default list for new subscribers to be placed in?

Hello @Texas Christian HomeschoolP1010794387 ,

You'd need to edit any sign up forms you have through us, or the settings of integrations if that's how you sync contacts, to make the preferred list the one they add new contacts to. When it comes to uploading, it'd just be a matter selecting that list each time you upload.
