At this time segments only allow for adding to lists. So the workaround to remove segmented contacts from a list would be:
Add the segments to a newly made list made only for the sake of this workaround; call it something recognizable like "remove segment list."
Go into the "remove segment list," and select-all the contacts by selecting the top-most checkmark box.
At the top, click Actions > Remove from list > select your main contact list
With those contacts removed from the main contact list, you're free to delete the "remove segment list" and the applicable segment.
