So contact CAN NOT unsubscribe from certain/individual lists?
They HAVE TO go in and update a profile from a link that is buried under the unsubscribe in the middle, where they have to send themselves and e-mail and click in a link in that e-mail ad, then pick the lists the want to be on (if we make available)?
Unsubscribe from all is quickest easiest choice and most likely course of action, thinking if they miss it they will just resubscribe......
I am correct in these statements?= or doing something wrong?

Unsubscribing is a legal and Compliance-related process that makes it so your account can't email those contacts. Even if you ever move to another email service provider, you're still legally obligated to maintain those unsubscriptions. This process is as streamlined as possible to ensure contacts' privacy and mailing permissions are protected, and to ensure our and our customers' sending reputations are maintained.
With that said, you can setup your unsubscription process to give your contacts an opportunity to opt into and out of certain lists, as an alternative to wholly unsubscribing from you. Using the Update Profile system, you can include this as an alternative link in your email footer, which contacts can select to update their list membership, based on the lists you make viewable and editable. If multiple list options are available in your UP form, those options will also appear on the unsubscription confirmation page, as an alternative for contacts that click the unsub link in the footer.
Remember that not all lists need to be included in the UP / unsub setup. Contacts will only be able to manipulate their list membership for the ones you've explicitly selected to be available, viewable options. Contacts will simply see those available lists' names on the UP form / unsub confirmation page, and be able to decide if they'd prefer one of those.
