But if I unschedule and edit, I lose the targeted audience (registrants, for example). It just goes back to the entire contact list. What am I doing wrong??

It looks like you're responding to a thread that's over a year old and only pertains to regular emails, not to the emails built in events.
There's a known issue that our devs are investigating where non-responder emails in events that were copied from a previous invite are being converted back into regular invite emails if they're not immediately sent/scheduled.
In the meantime, the only workaround would by to make the non-responder email from scratch, or to do any edits and scheduling all in one sitting if copying from an invite.
