Changed email settings to show as sent from and reply to admin@...com but it is still showing the main billing contact's personal email in the unsubscribe link. Could not edit within the email either (can only change address of company).

So the answer would be that I need to have the main account owner change and verify the intended display email that will appear next to the unsubscribe link, not add a new user and send an email with that profile. Thanks for your time.

The default functionality of unsubscribe links for previews and test sends, regardless of who they're sent to, is to show the account's main address.
When you actually send the email out, it will show the contact's address in the footer.
