There might be a few ways to do what you're describing:
Include an RSVP block in an email. This is mainly a "yes" or "no" setup, so it wouldn't have time scheduling associated with it however.
Include a poll block in an email with the "poll options" being the time slots available.
Create an event, and send out an invitiation email through that, so people can fully register for the event- including time slot selection via addons or tickets.
If you're on some kind of scheduling program, you could link to it in your email via the standard text, button, or image linking options.
