I am not sure what the spacer function does and how to use it. Additionally, I would like to change the line spacing in a paragraph without changing all the sentences. How would I do that?

Spacers are meant purely for the sake of adding additional empty space between sections, mainly as an aesthetic / readability element. Their use, and how large they are, is 100% dependent on the rest of your email's layout, content, etc.
Line spacing will affect everything within a text block. If you want separate line spacing for different paragraphs, I'd recommend setting up separate text blocks.
