Anyone experiene the trouble of a test email showing ellipses in place of sections of text, essentially minimizing elements of the email?

I'm unable to recreate the issue displayed in my Gmail, on either my phone or desktop setups. Certain settings in Gmail and Outlook can potentially result in it being more extreme with its content clipping, such as the conversation mode.
Another thing is that if your email program thinks that some of the test sends are extremely similar, especially if they have very similar subject lines, it may clip the content because it's essentially treating it like a copy of what's already displayed earlier in that email thread.
