Email Templates w place holders/empty content?

Hi, I'm going to have my client switch to your service from .

 

Question, when I just want to start an email from scratch, based on basic template (with place holders and empty content), where do I find those? When I look at 'Select a Template', I don't see them. I had to search for 'basic'.
