I've gone into advanced settings, and it's telling me the email address I've added is already authenticated, but the old one is showing up when I'm editing my welcome page that's sent after someone signs up for my newsletters

Hi @SandySchaloske. By "welcome page", do you mean the Welcome Email? If so, you can edit the Welcome email and update the From address by clicking Email Settings.
