I would love it if you could add the day of the week where you list the date and time the campaign was sent. I am trying to see if there are certain days of the week and time combinations that get better performance. Thanks!

Where in your account are you looking for this option? At this time the Campaign page in a user's account does display the date and time a campaign has been sent.
