How can I get back to the former process of creating a document? This is so annoying

Are you asking how to upload a document or link to one in your email? I'm not aware of any recent or drastic changes to the process if so. Can you describe where in the process you're encountering issues?
I cannot get rid of the " Your headline" , "Download Document " and the bottom row of symbols, none of which I want in the message I send. I used to be able to just use the delete symbol to the right, but it is no longer there.
So this is referring to an email generated from a PDF import? Are you able to just click the sections you want to get rid of, and click the trash can icon in the toolbar at the top when it displays?
I am not "able to just click the sections you want to get rid of, and click the trash can icon in the toolbar at the top when it displays" because there is no longer a trash can icon in the toolbar at the side for me to use. When I click on the trash can icon the whole document disappears. I have figured a workaround of copying the pdf and pasting it into the section where the document had been.

I'm afraid I'm not able to recreate what you're describing. When I reuploaded the pottery PDF for an email creation, I was able to select the individual blocks, and select the Trash can icon in the formatting bar that displays above when a block is selected. I can confirm that this method does not delete the entirety of the PDF-generated email, just the selected section (headline, image, etc.)
