My VP is wanting a way that when one clicks on "update profile/preferences" that it directly opens a window where one can select which emails they no longer want to receive rather than click on a button which sends an email where they update their preferences. Is that a possibility through Contact Contact?

That's how the Update Profile link in emails works, if you have multiple list options selected for the form. Allowing multiple list selections should also make those an alternative on the unsubscribe confirmation page.
